What makes bread from Trieste different from Puglian bread? Why do some foods last longer or satisfy our senses better? The answer lies in their microscopic structure, which influences their fragrance, preservation, and even how our bodies absorb them.
Food, but above all research, will be the topic of discussion in Trieste on December 12 at 4:30 PM at the historic Antico Caffè San Marco during the event “Stay Fresh – Sustainability in the Fridge.” This marks the launch of the third season of the podcast “Alla Ricerca – Stories of Science and Innovation from the Laboratories of Friuli Venezia Giulia,” a collaboration between Area Science Park, ICTP, Rai FVG, and SISSA.
The event will provide an opportunity to learn about the contribution of fundamental research to food sustainability, with the help of Franco Zanini, a researcher at the Elettra Sincrotrone laboratory and a guest on one of the podcast episodes. Zanini will demonstrate how the microscopic structure of food can be studied using a synchrotron, shedding “new light” on our understanding of food.
During the event, the episodes of the third season of "Alla Ricerca" will also be unveiled. This series of six science communication podcasts was written by Debora Lamcja, Elena Toti, and Francesca Trinchini, students of the “Franco Prattico” Master’s in Science Communication at SISSA, and produced by Riccardo Cicconetti, program director at Rai FVG.
The podcast, set to premiere on Radio Rai FVG as part of the “Radar” program every week starting Tuesday, January 7, 2025, aims to explore the research activities of the many scientific centers across the region. It does so through the testimonies and voices of researchers.
The podcast’s themes will be varied and multidisciplinary, reflecting the diversity of research conducted daily in Friuli Venezia Giulia. Topics range from cardiovascular disease studies to the mechanisms of how the brain learns to read, Trieste’s Antarctic expeditions, tropical diseases, and the environmental impact of scientific research. This is made possible through the participation and collaboration of researchers from Area Science Park, Elettra Sincrotrone, ICGEB, ICTP, OGS, SISSA, the University of Trieste, and the University of Udine.
After its premiere on Radio Rai FVG, the episodes will be available on Rai Play Sound.
